Andurma is a dairy product similar to ice cream but prepared using a different method. This product is mainly popular in the rural areas of Azerbaijan, especially in the Nakhchivan and Kars regions. To make Andurma, milk and sugar are boiled together, then continuously stirred with a wooden spoon. The mixture is cooled until it becomes a thick mass with an interesting taste. In the countryside, this product is often present at the table in the summer. Andurma is distinguished by its natural ingredients and unique preparation method.
